Why choose a pH Pocket Tester?
Best for:Β Quick checks, low-risk screening, portability
pH Pocket Testers are a popular choice in food production environments where portability, speed, and simplicity are essential. These compact devices are:
- Small, lightweight, and easy to carry: ideal for use across the factory floor.
- Fast readings with minimal setup: perfect for quick, straightforward pH checks.
- Cost-effective solution: a practical choice for low-risk screening and routine spot checks.

Ideal Applications in the Food Industry
pH Pocket Testers are intended for environments where simplicity, speed, and portability are more important than advanced features or laboratory-level accuracy. Theyβre particularly well-suited to:
- On-the-go testing: quick and straightforward pH measurements.
- Testing of liquids, semi-liquids, and semi-solids e.g. sauces, dairy, or fermented food.
- Testing of solid, fibrous food products (if you select a model with a spear-tipped electrode).
- Hygiene verification (rinse water, cleaning solutions).
- Education, training, or indicative measurements.
- Incoming goods checks.
- Spot checks on the factory floor.

Key Considerations
While pH Pocket Testers offer many advantages, there are a number of factors to consider when deciding if theyβre the right choice for your application.
Measurement Capabilities
- Fewer electrode options: Ideal for simple pH measurements, but if you canβt find the right electrode for your application, a Handheld pH Meter will provide more flexibility.
- Suited to general applications: Accurate enough for standard tests, but high-precision applications may require the enhanced accuracy of Handheld or Benchtops.
- Reduced measurement range: Compared to Handheld or Benchtop units, pH Pocket Testers offer a narrower pH range and a reduced temperature range.
- Lower accuracy and resolution: Not as precise as Handheld or Benchtop meters.
- Limited calibration options: Fewer calibration settings than larger units.
Design & Practical Use
- Handheld only: Must be held during use, whereas Handheld pH Meters can be paired with a stand and Benchtop testers are designed for stationary use.
- Reduced reach: The electrode and display are integrated into one compact unit. This improves portability but may be limiting when extended reach is required.
- Slightly less robust: Durable by design, but smaller and more compact than Handheld and Benchtop models.
- Shorter electrode lifespan: Electrodes may need replacing more frequently than those used in larger systems.
Data & Compliance Considerations
- No automatic data logging or software compatibility: Cannot integrate with external systems for data tracking or reporting.
- Not ideal for critical QA decisions or audits: Better suited to routine testing than regulated or highly controlled environments.
Why choose a Handheld pH Tester?
Best for:Β Routine QA testing, production control, audit-relevant checksΒ
Handheld pH TestersΒ are ideally suited to routine QA testing and production control where a higher level of accuracy and repeatability isΒ required, but portabilityΒ remainsΒ essential.Β
- Better accuracy and repeatability than pH Pocket Testers.
- Portable but robust design, suitable for factory environments.
- Multi-point calibration and temperature compensation.
- Replaceable electrodes suited to liquids, semi-solids, viscous samples and raw meat.
- Expanded range of electrode options: when compared to pH Pocket Testers, Handheld Units have a wider range of electrode options. Choose from different electrode tips (e.g. flat, bulb, tip, knife shield), temperature ranges, and materials.
- Calibration options: wider range of calibration options than pH Pocket Testers. Some units even have customisable calibration points and a log that shows when the device was last calibrated.
- Hands-free capabilities: Handheld pH Testers can often be used with a stand β mimicking a Benchtop set up, with the added benefit of being portable.
- Optional data logging: some Handheld pH Testers can act as a logger, logging pH measurements at specific intervals and transferring data to external software.

Ideal Applications in the Food Industry
Handheld pH Testers are compatible with a wide range of electrodes which makes them suitable for a variety of food factory applications, capable of testing everything from high-protein and fat content samples to raw meat and carcasses. Popular applications include:
- On-the-go testing: portable pH measurements that require heightened accuracy.
- Testing of liquids, semi-liquids, and semi-solids: ideal for sauces, dairy, or fermented products.
- In-process testing of food and beverages.
- Testing of solid, fibrous food products (if you select a model with a knife-tipped electrode).
- CCP monitoring linked to HACCP.
- Finished product checks.
- On-site pH measurements conducted by the QA and technical teams.

Why Temperature Matters in pH Measurement
pH readings are affected by temperature, so itβs essential that your device can account for this. Otherwise, your results may not be accurate. Thatβs why pH Pocket Testers and some Handheld pH Testers are equipped with Automatic Temperature Compensation (ATC).
This feature ensures temperature fluctuations donβt interfere with pH measurements. It also helps to keep the design compact, which is perfect for on-the-go testing.
What ATC Actually Does
Itβs important to note that ATC does not change or βcorrectβ the actual pH of your sample. Instead, it compensates the measuring system.
As temperature changes, the sensitivity of a pH electrode also changes. ATC monitors the sample temperature and automatically adjusts the electrode response to ensure the reading remains accurate at that specific temperature.
Without ATC, readings can drift purely due to electrode behaviour, and errors of 0.1β0.3 pH units (or more) are common when temperature differences are not accounted for.
What ATC Does Not Do
ATC does not compensate for genuine chemical changes in the sample.
Many solutions, including buffers, food products and process liquids,Β naturally change pH as temperature changes. ATC will not correct these back to a reference temperature such as 25 Β°C; it simply ensures the measurement is accurate at the sampleβs current temperature.
Integrated vs Separate Temperature Probes
Some food manufacturing sites prefer to use meters with separate pH and temperature probes. While combining the two functions into a single probe is convenient, separating them can sometimes improve efficiency. With two dedicated probes (one for temperature and one for pH) each sensor performs a single function, which can slightly speed up the measuring process.
Additionally, this setup can be more cost-effective over time, as temperature probes typically last longer than pH electrodes. So, if just one wears out, only that specific part will need to be replaced.
If you opt for a Handheld or Benchtop pH meter, you will have a choice of integrated ATC or separate pH and temperature probes β whatever works best for your site.
Manual Temperature Adjustment Option
There is also the option to choose a Handheld pH Meter without temperature compensation. Instead, you can adjust the temperature to the one you are testing at through the device settings.
Key Considerations
Handheld pH Testers are a versatile solution for many food production environments, but there are some practical considerations to review before selecting this option.
- Requires more care and training than pH Pocket Testers.
- Not ideal for high-throughput laboratory environments.
Why choose a Benchtop pH Meter?
Best for:Β Laboratory analysis, high accuracy, method validationΒ
Benchtop pH Meters offer the highest level of accuracy and stability in pH measurement. Typically used in laboratory environments, they are ideal for validation work, investigations, and applications where defensible data isΒ required.Β
- Highest level of accuracy when compared to pH Pocket Testers and Handheld pH Meters.
- Expanded range of electrode options: when compared to pH Pocket Testers, Benchtop Units have a wider range of electrode options. Choose from different electrode tips (e.g. flat, bulb, tip, knife shield), temperature ranges, and materials.
- Expanded range of features: data logging, date and time stamps, calibration logs, temperature adjustment calibrations, and pH calibrations ect.
- Benchtop pH Meters are often supplied with a keyboard, sample stirrer, and heater.
- Software compatibility and data logging: enhanced software connection and data analyses. Plus, Benchtop Units are positioned in a lab, perfect for automatic connection to your tablet or PC.
- Supports the simultaneous measurement of multiple parameters within one sample. This is also true of the pH Pocket Testers and Handheld pH Meters, but Benchtop Units will be able to test a wider range of these parameters to a higher level of accuracy.

Ideal Applications in the Food Industry
Benchtop pH Meters are typically used for applications that require the highest level of accuracy. Instead of being found in active production zones, they are typically used by Quality Assurance Teams in QA offices or laboratories.
One of the key advantages of benchtop systems is their potential to monitor multiple parameters simultaneously, such as pH, conductivity, TDS, salinity, temperature, and more.
They are also particularly well suited for working with a wide range of sample types, especially where sample stabilisation is required. The ability to use an integrated or external stirrer helps improve measurement accuracy and repeatability.
Common applications include:
- Final product testing: ensuring batch consistency and compliance.
- High-risk or highly-regulated products: Benchtop Units support the testing of products where pH is a matter of food safety.
- Complex or multi-phase samples: suited to applications that require advanced calibration and electrode options.
- High-risk or regulated testing.
- Audit compliance: applications where data logging, traceability, and software integration are key.
- Shelf-life studies.
- Product development and reformulation.
- Reference measurements.
- Dispute resolution and investigations.

Key Considerations
pH is affected by temperature, which is why a lot of teams like to carry out measurements as close to production conditions as possible. Benchtop Units are typically used within a laboratory environment, so may require additional equipment such as a hot plate heater and stirrer to replicate production conditions. Stirrers are often included in benchtop kits.
If your pH applications are fairly straightforward, you might find that the features of a pH Pocket Tester or a Handheld pH meter suffice. Benchtop Units are usually reserved for situations where accuracy is of the upmost importance and specialised features are required.
- Fixed location (not portable)
- Higher upfront investment
- Requires trained users and a controlled laboratory environment
