Validating Cooks and CriticalControl Points with Klipspringer'sMulti-Channel In-Process Data Logger

The team at McCaughey Foods needed to validate their process for producing
ready-to-eat chicken in line with food safety and quality requirements. Quality Manager Blinné Treanor approached Klipspringer with two key challenges:

Challenge 1: Suitability Across a Wide Temperature Range

To validate both the cooking process and the site’s Critical Control Points, McCaughey Foods required a solution capable of performing across extreme temperature conditions. The logger needed to withstand high oven temperatures during cooking, as well as the cooling and freezing stages, to ensure full process validation.

Challenge 2: Live Data for Cook Validation

McCaughey Foods required an in-process logging solution that could provide live temperature data. This would allow the team to accurately determine cook times, confirm that products were fully cooked, and use real-time data insights to prevent overcooking while maintaining product quality.

A family-owned business founded over 60 years ago, McCaughey Foods has evolved from its heritage in raw turkey processing to offer a comprehensive range of fully cooked turkey, chicken, beef, pork, and ham products.

Rooted in the local community of Castleblaney, Co. Monaghan, the business has achieved large-scale growth and now operates internationally. This expansion includes McCaughey Foods AB, a poultry processing facility in Sweden specialising in ready-to-eat chicken products cut to customer specification.

The Solution: Klipspringer’s
Multi-Channel In-Process Data Logger

Klipspringer supplied McCaughey Foods with a Multi-Channel In-Process Data Logger.
The system features a high-temperature logger protected by a bespoke thermal barrier that can be customised to suit any specification.

In this instance, the barrier was designed to withstand the full range of temperatures encountered on site. Made from stainless steel and fully food-contact approved, it safeguards the logger throughout the cooking, cooling, and freezing processes.

The data logger also includes optional two-way RF telemetry, enabling the team at McCaughey Foods to monitor conditions in real time and ensure products have reached the correct temperatures without the risk of overcooking.

The Results – What was the impact?

Since implementing the Multi-Channel In-Process Data Logger, the team at McCaughey Foods has access to the data needed to fully validate their Critical Control Points (CCPs), strengthening food safety and quality assurance across the site.

Real-time temperature monitoring has given the team greater control over the production process, allowing them to optimise cook times and consistently deliver fully cooked, ready-to-eat products. This not only minimises the risk of overcooking but also improves efficiency and enhances confidence in product quality.

The data above is taken from a separate study. It was generated using Thermal View Software, compatible with the Multi-Channel In-Process Data Logger. Click the images for a full-size view.

Real-time data provides greater control over the cooking process

Enhanced confidence in food safety standards and product quality

Easy and effective validation of production process and CCPs

System has a bespoke design tailored to specific site processes

“The Multi-Channel In-Process Logger has given us the data we need to validate our Critical Control Points. The live data also allows us to accurately monitor cooking times, ensuring products are ready-to-eat without the risk of overcooking.”
